Pizza Tortilla Roll-Ups

Pizza Tortilla Roll-Ups are a quick, juicy, and family-friendly lunch or snack. They are made with tortillas, tomato sauce, cheese, and ham.

Pizza Tortilla Roll-Ups
Pizza Tortilla Roll-Ups are one of those dishes that come together quickly and effortlessly, yet the result is always delicious, juicy, and, just the way we like it, homemade. They are a great choice for a quick weekday lunch, a family dinner, a birthday party, a picnic snack, or a relaxed get-together with friends. Everything we love about pizza is wrapped inside soft tortillas: tomato sauce, melted cheese, ham or cooked prosciutto, and fresh basil. The best thing about this recipe is that there is no need to make pizza dough, wait for it to rise, or spend a long time preparing it. Instead of traditional pizza dough, we use large flour tortillas. As they bake, the cheese melts beautifully, the edges of the tortillas become lightly golden and crisp, while the center stays soft, juicy, and full of flavor. This is a recipe that kids will happily enjoy, yet it is also attractive enough to serve when entertaining guests.

Great ingredients are essential

We need large flour tortillas, tomato sauce or pizza passata, grated cheese, ham or cooked prosciutto, fresh basil, and a little olive oil. The combination is simple but incredibly flavorful.

Choose a cheese that melts well. Pizza mozzarella, Gouda, Edam, or a blend of cheeses all work beautifully. It is important not to use too little cheese, as the melted cheese holds the filling together and makes the roll-ups even more delicious. Finish with a little extra passata, a drizzle of olive oil, and the reserved cheese so the roll-ups become beautifully golden as they bake.

Top 5 tips and tricks

Follow these tips to make sure the recipe turns out perfectly every time.

  1. Use just the right amount of filling. As tempting as it may be, it is better to use the filling in moderation. Too much sauce or cheese can cause it to spill out while rolling the tortillas.
  2. Use a thick tomato sauce. Use a passata that is rich, thick, and well seasoned. A thinner sauce will make the roll-ups softer and less compact.
  3. Roll the tortillas tightly and carefully. Rolling them tightly is essential for helping the roll-ups hold their shape. Fold the sides inward first, then roll up the tortilla like a wrap.
  4. Arrange the roll-ups snugly in the baking dish. Place them tightly next to one another. This prevents them from opening while baking and helps them stay beautifully juicy.
  5. Let them rest for 10 minutes after baking. Straight from the oven, the roll-ups will be very hot and soft. Letting them rest allows the cheese to settle slightly, the flavors to come together, and the roll-ups to be served more easily.

Frequently asked questions and answers

  1. Can I prepare Pizza Tortilla Roll-Ups ahead of time? Yes. You can prepare the roll-ups a few hours in advance, arrange them in the baking dish, cover, and store them in the refrigerator. Bake them just before serving.
  2. Can I use corn tortillas? Yes, but flour tortillas are softer and easier to roll. Corn tortillas tend to break more easily.
  3. Which cheese works best? Choose a cheese that melts well. Pizza mozzarella, Gouda, Edam, or a blend of cheeses all work beautifully.
  4. Can I make a vegetarian version? Of course. Omit the ham and add vegetables, olives, corn, mushrooms, or spinach. Cook the vegetables beforehand if needed to remove excess moisture.
  5. Are Pizza Tortilla Roll-Ups suitable for kids? Yes, our kids love them.

Storing

Pizza Tortilla Roll-Ups are best served freshly baked, while the cheese is still melted and the edges are lightly crisp.

Store any leftover Pizza Tortilla Roll-Ups in an airtight container in the refrigerator for up to 2 days. Let them cool completely before storing.

Reheat them in the oven, air fryer, or a skillet. For the best results, place them in an oven preheated to 180°C (350°F) and heat for about 8–10 minutes, until warmed through and lightly crisp again. You can also reheat them quickly in the microwave, but the tortillas will be softer, so this method is best when you are short on time.

  • preparation

Place a rack in the middle of the oven and preheat the oven to 190°C (375°F), fan-assisted.

  • prepare the rolls

Spread a generous tablespoon of passata over each tortilla. Arrange most of the grated cheese down the center, reserving 2 tablespoons for the end. Spoon another 2–3 tablespoons of passata over the tortillas, drizzle lightly with olive oil, and sprinkle with the reserved grated cheese.
